I whipped up these Mint Chocolate Pudding Parfaits last month for National Chocolate Mint Day (it’s one of my husband’s favorite days to celebrate!) He’s a mint chocolate fiend. I can’t even begin to tell you how excited he is about these cookies. And don’t worry..they somehow found their way into the grocery cart this past weekend. Can we say obsessed?
These parfaits came out great! I found the peppermint extract to be on the extreme end of the scale when it comes to mint flavor, so I’m wondering if regular mint extract might be a better option. I would also add layers of cookies in between the pudding layers next time. The cookie crumb layer on the bottom wasn’t enough crunch for me, but the hubby was in minty-chocaholic heaven!
Mint Chocolate Pudding Parfaits
1 package white chocolate instant pudding mix
1 package chocolate fudge instant pudding mix
green food coloring
mint oreo cookies (1/2 package)
1 container Tru Whip (or Cool Whip
~ Prepare each pudding mix according to the directions on the box. Add food coloring and 1/4 tsp of peppermint extract to the white chocolate pudding. Place in refrigerator to set while you prepare the rest.
~ Place half of the oreo package in a food processor and mix until crumbled.
~ Mix 1/3 of the Tru Whip into the mint green pudding. Mix 1/3 of the Tru Whip into the chocolate pudding.
~ Add a spoonful of cookie crumbs into the bottom of each serving bowl or glass. Begin to layer the pudding, alternating the chocolate and mint.
~ Top off the pudding parfait with a scoop of Tru Whip and crumbled oreo cookies.
